Wildflowers

Body

Welcome rains and plentiful sunshine combined this week to transform the countryside around Canadian, yielding a wondrous roadside display of wildflowers, best viewed along US 60 towards Glazier.

This Sand Lily (Mentzelia decapetala) was just one of many that posed for us in a field of sunflowers Monday evening about the time the sun started melting in the west.

What's Cookin' in Canadian: Mexican Quesadilla Casserole

Body

I think casseroles should rule the world of weeknight dinners: They can be easy to prep, make a few ingredients go a long way, will feed a crowd, and make for quick cleanup. This recipe by Melissa Meinke, found on Allrecipes.com, features some of my favorite ingredients and is sure to be a winner. I make casseroles like this well ahead of time, refrigerate them covered, and bake them when needed. Enjoy!
