What's Cookin' in Canadian: Amanda’s Southern Cabbage Soup

Amanda Phillips looked at a traditional cabbage soup recipe and made it her own to rave reviews! The original recipe called for diced potatoes, and they can easily be added to make a hardier soup. Once the basics are combined, it is a taste-as-you-go soup. Like many good cooks, she does not measure. A shake of this, a dash of that… start with a light hand and add as flavors combine. Enjoy!

My tomato plants look horrid, just horrid BUT they are still producing lovely little red fruit so I will ignore the brown and limp foliage and make this delicious pasta. Roasting any vegetable enhances the flavor, with tomatoes it brings out a wonderful rich sweetness. Red pepper flakes bring a touch of heat and the Romano cheese smooths it all out. Recipe by Scott Keeneman on Allrecipes.com serves six and can be adjusted easily. Enjoy!

Koetting coaches up the Rotarians

At the request of Rotarian Mike Gardiner, CISD Athletic Director and Head Coach Chris Koetting (both in photo above) offered an update on this year’s football team during last week’s Rotary Club meeting. Koetting said this year’s biggest obstacle is that only three starters returned from last year’s team. Most of this year’s players have no varsity experience. The quarterback and running back are both sophomores.
