I AM THRILLED to be serving our community as the new director of the River Valley Pioneer Museum and excited for the year ahead. I begin my journey here with a very grateful heart for the work that’s been done before me to build such a wonderful facility and collection for our community and guests. I am also deeply grateful for the community that supports our museum through memberships and donations. Winners of the Canadian/Hemphill County Chamber of Commerce Christmas Lighting Contest were announced this week. The prize for first place was awarded to Esmeralda Shields, whose home is located at 823 Elsie (top). The second-place winner was the home of Tim and Amy Pierce, located at 1200 4th St (middle). The third-place winner was Dorothy Erwin’s home at 221 3rd St (bottom).

I cut this recipe out of the San Antonio Express Newspaper over 20 years ago. I hadn’t made it in years and decided to go ahead and make it for The Record staff. They liked it well enough to ask me to share. It’s quick and easy and can be served for breakfast or lunch. Enjoy.
