My sister shared this New York Times recipe with us recently. It’s a quick summertime cold salad that’s hearty and delicious. If you can pick up a pack of vacuum-packed pre-cooked lentils, you won’t have to turn on your stove. Trader Joe’s or the Natural Grocery Store usually carries them. Enjoy.
