Body Like many, we are now harvesting cucumber, squash, and zucchini. My PT guru and fellow gardener, Carol, brought us eggplant as well. This is my favorite way to prepare eggplant. My sister served it to me years ago on a visit, and I was hooked. I mean really hooked.
