If you want to halve the time it takes to roast or grill a whole chicken—spatchcock it! The term “spatchcock” is rumored to be 17th-century shorthand for “dispatching the cock.” This technique involves splitting the chicken by removing the backbone so you can flatten it, resulting in crispier skin and quicker cooking. My raised-bed gardening experience

All of my vegetables are grown in containers now. As the perennial garden matured, it was challenging to find space to plant. These raised beds were perfect for me. They face east and get six to eight hours of sun during the growing season. The slatted V-shaped planter bottoms allow for good drainage and lots of root growth. My crops are organic. What bugs become an issue are dispatched with ease.

Sept. 6 is Read a Book Day! For some of us, reading is as essential as breathing (OK, almost-but not as). Libraries used to be known as “the poor man’s university,” but with the advent of the internet, that name has fallen by the wayside. All kinds of information is available at our fingertips in a fraction of a second. While one can learn lots of things—and some things we don’t want to learn, one must be discerning in the information they find on the internet. The library has a large number of databases available to any card holder over most any subject you want to read up on. These sources have been vetted and contain reliable information. We invite you stop by get acquainted with today’s ‘poor man’s university.’

Kasen Evans celebrates opening day of dove season

Dove season opened on Tuesday, Sept. 1, in Texas’ north zone, which includes Hemphill County, and 3-year-old Kasen Evans wasted no time bagging his first dove. Kasen is the son of Canadian residents, Trey and Courtney Evans, and this photo—which was taken by Trey at the Gene Howe Wildlife Management Area Tuesday morning—was sent by his grandmother, Dana Evans. Kasen loves to hunt and fish, and has been doing so since he was 2 years old.

Our newest Rotarian, Ike Julian, took us on a trip around the world with his classification speech. Ike has experienced more in his (almost) 33 years than many people do in a lifetime. Thirty minutes wasn’t enough time to scrape the surface of his adventures, so we know this article won’t do him justice either, but we’ll try.
