What's Cookin' in Canadian: Skillet Lamb Chops

INGREDIENTS 8 lamb chops (1 inch thick) 1 tablespoon chopped fresh thyme leaves, plus one large sprigs 3/4 teaspoon kosher salt, divided 1/2 teaspoon freshly ground black pepper 4 tablespoons unsalted butter, divided 1 small shallot, finely chopped 1 large garlic clove, smashed 1/2 cup dry white wine or low sodium chicken stock 1 teaspoon freshly squeezed lemon juice 1 tablespoon finely grated lemon zest PREPARATION Remove lamb chops from refrigerator and massage chopped thyme, 1/2 teaspoon salt and pepper into the meat. Set aside at room temperature for five minutes.

By Brian Lopez, The Texas Tribune Over the last two years, Texas’ public education system has been through the wringer, from shifting to online classes and debates about making masks mandatory to the ongoing tensions over how race and sex should be taught in schools to, most recently, the renewed discussion over school safety in the aftermath of the mass shooting in Uvalde where 19 elementary school students and two teachers were killed. Teachers have been at the front lines of all of these issues—and it’s taken a toll on them.

Lady Cat cross-country team earns a little respect statewide

Canadian High School’s Lady Cat cross-country program has earned some preseason attention in the state rankings, which spotted them in fifth-place overall in 3A, behind Holliday (No. 1), Lorena, Poth, and Whitesboro. Other 3A schools in the top 10 preliminary rankings were Lytle, Crane, McGregor, Yoakum, and Paradise.
