My sister and I love kale. She grew the most beautiful hydroponic greens in Hawaii, and we enjoyed it daily, lightly sautéd in olive oil and garlic. She told me about this six-ingredient kale salad that she discovered on the Epicurious website. We made it last week, and it is delicious. I have heard this a time a two in my life, Happy Memorial Day! Honestly, there’s nothing really happy about Memorial Day. It is a day dedicated to the memory of soldiers who have passed on.

The Class of 2020 will go down in history. Both high school and college graduates this year face a decimated economy and a pandemic. Not since the Greatest Generation survived the Great Depression and World War II has a generation crossed over into adulthood under such adverse conditions. The main characteristics of the Greatest Generation were that they persevered, they made do, and they survived. The Class of 2020 will do the same.
