The Citadelle Art Foundation is excited to announce their newest exhibit “Western Visions: Paintings and Serigraphs by Billy Schenck,” is on display now. Billy Schenck is an internationally renowned artist, and one of the originators of the contemporary “pop” Western movement.

My friend Debbie, who lives outside of Dallas, served me a steak prepared this way when I visited several years ago. Unforgettable. We were chatting about food the other day (What else do you talk about during a pandemic except your next meal?), and she said she prepared the dish recently, and it was delicious. In a Paris Bistro, it is traditionally served with French fries. This recipe calls for filet mignon, but I think that any good lean cut of meat cooked this way would be delicious. Enjoy!

Eight more minutes. Adding eight minutes to the school day is what my local school district plans to do. The first day of school has been postponed until Sept. 9. But that’s as far as our school board has gotten in their plans to reopen school. Football, however, got a thumbsup from UIL to start practice on time Aug. 3, so one key component is in place.
